    Ingredients

    • Rice paper wrappers
    • 1 cup cooked shrimp, peeled and sliced in half lengthwise (or tofu for a vegetarian option)
    • 1 cup vermicelli rice noodles, cooked and cooled

    • 2 tablespoons hoisin sauce

    • 1 teaspoon soy sauce
    • Warm water to thin the sauce

    Directions

    • Have all fillings (shrimp or tofu, noodles, vegetables, and herbs) prepared and placed in an assembly line.
    • Dip rice paper wrappers, one at a time, in warm water for a few seconds until they are soft but still slightly firm and pliable.Lay out a softened rice paper wrapper on a clean, damp cloth.
    • Place a lettuce leaf on the bottom third of the wrapper.
    • Add a small handful of vermicelli noodles.
    • Top with cucumber, carrot, shrimp or tofu, mint, coriander, and basil.
    • Fold in the sides of the wrapper and start rolling tightly from the bottom, enclosing the filling.
    • Mix hoisin sauce, peanut butter, soy sauce, and enough warm water to reach desired consistency.
